macadamia pesto bowl
Last week I flew back to San Diego after spending ten days on Kauai! One of my favorite parts about Kauai is the food! I am always inspired to cook with more fish, macadamia, turmeric, ginger and papaya after coming back from Hawaii. While on Kauai, I went to Kauai Juice Co at least once a day for either a snack or kombucha & this recipe was inspired by one of their daily bowls! I also highly recommend pairing this bowl with an iced ginger turmeric latte on sunny day ;)
Macadamia Pesto Bowl
Serves 2-3
Ingredients:
1c quinoa
1tbs olive oil
1tsp turmeric powder
¼ c chopped mac nuts
¼ c parsley
¾ c basil
2 tbs olive oil
1 cucumber
¼ c diced tomatoes
¼ c Kalamata olives
Spring mix
Directions:
Bring two cups of water to a boil, and add quinoa, turmeric, mac nuts, and olive oil. Bring to a simmer and let cook for about 15 mins. Let cool a few hours or overnight. Blend parsley, basil, olive oil, salt, and pepper, for 30 seconds on high. Put the quinoa blend in a bowl & top with cucumber, olives, tomato, spring mix & light parsley pesto blend!
