pb & j smoothie bowl

After a long break, I am finally getting back into smoothies and smoothie bowls. My freshman year of college, I went through a small food crisis when I realized that my diet was severely lacking in fresh fruits and vegetables. Soon after this nutrient deficient realization, I acquired a blender. In the following months, I blended anything I could get my hands on. I would take backpacks full of bananas and oranges from the cafeteria. Then, I would freeze the bananas for banana ice cream and throw oranges into the blender for fresh squeezed orange juice.

Now, after a many month-long smoothie detox, I am remembering the all the joys that a blender can bring. For this smoothie, I wanted the comforting flavor of a peanut butter and jelly sandwich. There used to be an emerald city smoothie shop a few minutes from my house, which had the greatest peanut butter and jelly smoothies, unfortunately they moved locations a few years ago and I have been left to make my own pb&j rendition.

Ingredients for the Bowl:

  • Frozen Berries (I use a berry medley)

  • Scoop or two of preferred nut butter

  • One banana

  • A few scoops of chia seeds

  • Kefir or plant based probiotic drink

  • Granola, diced strawberries, and coconut and almond shreds **for topping

Directions:

Take all the ingredients (minus the toppings) and blend on high speed for about thirty seconds! Pour into a bowl of your choice and decorate with the toppings of your choice!
